Distilled in 1991 at Macallan and matured for 31 years, this Speyside Single Malt Scotch Whisky was finished in an Octave cask — approximately one-eighth the size of a traditional butt. The Octave Premium Range is reserved for Scotland's oldest and rarest whiskies, where the smaller cask gently expands and refines decades of maturation, adding new dimension while preserving the integrity of the original spirit.

Bottled at 47.8% with no chill filtration and no added color, this is a rare opportunity to experience one of the most storied distilleries in Scotland at its most mature and complex.

Tasting Notes

Nose: Rich and inviting with an intriguing complexity. Dark fruits, smyrna raisins, aged prunes, and sour amarena cherries are wonderfully complemented by a gentle Christmas spice note of cinnamon and cloves. With time, soft fresh floral notes emerge from under the weighty fruits.

Palate: Follows the nose closely. The rich sherried notes are not overbearing, but rather fresh and vibrant. The whisky has a beautiful, mouth-coating texture. The spices are a little more prominent but balanced by a lovely honey sweetness. A hint of toasted oak reveals its long cask aging.

Finish: Long and satisfying. The rich complexity of the nose and palate continues to the very end. As the spice fades and the fruits slowly retreat, the sweetness intensifies, leaving a delightful, warming aftertaste.

How to Drink It

Neat: The only recommendation for a whisky of this age and rarity. Allow it to rest in the glass for several minutes before your first sip.

With Water: A single drop, if desired, to open the floral notes beneath the fruit.
